THE BUFFET, UP CLOSE

Behind the scenes at Pensée: cooked to order

At Pensée in Guéliz, part of the buffet experience happens at the counter: an omelette takes shape, a crêpe cooks or a grill order is prepared. Here is what to look for at each meal.

What does cooked to order mean at a buffet?

A cooked-to-order dish is prepared when you ask for it. At Pensée, selected specialities are made in front of guests at a dedicated station. The counter complements the starters, dishes and desserts on the buffet, so you can enjoy both during the same meal.

It adds another dimension to the meal: watching the preparation, speaking with the team and enjoying a dish just after it has been cooked. The station is included in the relevant buffet; the preparations differ between breakfast, dinner and brunch.

Breakfast: omelettes, msemen and chocolate crêpes

At breakfast, omelettes, msemen and chocolate crêpes are cooked to order in front of you. Msemen, the layered Moroccan flatbreads, sit alongside breads and pastries. You might start with something savoury, then come back for a sweet finish.

The buffet also offers soups, salads, hot dishes, fruit and homemade yogurt to complete your plate. Breakfast runs from 7am to 1pm Monday to Friday and from 7am to noon at weekends. The drinks included in this offer are unlimited too.

Dinner: grills and crêpes made in front of you

In the evening, the cooked-to-order station offers grills and crêpes. A plate of salads, a Moroccan speciality, then something from the counter: the buffet lets you build dinner around your tastes. Hot dishes, savoury bites, fruit, pastries and ice cream complete the selection.

The dinner buffet is served every day from 8pm to 10:30pm. The selection varies by day, so the photos give a taste of the dishes rather than a fixed nightly menu. Dinner drinks are ordered separately and are not included in the buffet price.

Weekends: cooked to order at brunch

Saturday and Sunday brunch combines breakfast favourites with a lunch buffet. Grills and crêpes prepared in front of guests are included here too. Everyone can move between savoury and sweet choices while sharing the same table.

Brunch is served from 1pm to 3:30pm, with drinks charged separately. Keep that window in mind when planning your visit: weekend breakfast ends at noon, and brunch is a separate offer.

From buffet to counter: enjoy each preparation

Before filling a large plate, take a look around the buffet and find the cooked-to-order station. You can decide what you would like to try and leave room for a hot preparation or a crêpe at the end of the meal.

  • Ask the team which preparations are available during your meal.
  • Enjoy your cooked-to-order dish when it is ready, then continue exploring the buffet.
  • Allow time for cooking: the wait depends on orders at the station and how busy the service is.
  • Mention any allergy before ordering so the team can check ingredients and available options with you.
